Grilled Asparagus Pizzas with Gremolata

Grilled Asparagus Pizzas with Gremolata. This Pizza is very delicious to share with family and friends.

Total Time: 1 hour

Yield: 2 pizzas

Ingredients:

½ cup extra-virgin olive oil (plus more for brushing)

½ cup parsley, chopped

2 teaspoons oregano, chopped

1 & ½ teaspoons lemon zest, grated

3 tablespoons fresh lemon juice

1 garlic clove, minced

¼ teaspoon crushed red pepper

Kosher salt

Black pepper

1 pound thin asparagus, trimmed

Pizza dough

1 & ½ pounds of Miceli’s fresh mozzarella, torn

Instructions:

Step 1

In a small bowl, whisk together the olive oil, parsley, oregano, lemon zest, lemon juice, garlic, and crushed red pepper. Season the gremolata with the salt and pepper. Light a grill, and oil the grate. Brush the asparagus with the olive oil, and season it with the salt and pepper.

Step 2

Grill it over moderately high heat, and turn it until it is lightly charred (3-5 minutes). Transfer it to a carving board, and let it cool before cutting it into 2-inch lengths.

Step 3

On a lightly oiled, large baking sheet, stretch 1 ball of the pizza dough into a 12-inch oval, and brush it with olive oil. Grill the dough over moderate heat until it is lightly charred on the bottom (2-3 minutes). Flip the crust, and scatter half of the mozzarella and half of the asparagus on top.

Close the grill, and cook the pizza until the cheese has melted and the crust has become firm (3-5 minutes). Transfer it to a large board. Repeat this process with the remaining ingredients. Drizzle the pizzas with the gremolata, cut them into wedges, and serve them.
