  • Process carrots, turmeric, ginger and 1/2 cup coconut water in a blender on high speed until completely smooth, about 2 minutes. Pour the mixture through a fine-mesh strainer into a clean jar or container, pressing lightly with a rubber spatula to extract juice; discard solids.

  • Stir in salt and the remaining 1/4 cup coconut water.


    To make ahead: Refrigerate in an airtight container for up to 1 week.
