  • 1 tablespoon active dry yeast

  • 1 ½ cup softened unsalted butter 
  • 2 tablespoon All-Purpose Flour

  • 2 tablespoon whole milk

Instructions 

  1. In a small bowl add yeast along with some warm milk. Stir it with a fork until well combined. Keep aside and let the mixture sit for 10 minutes until the yeast reacts and foams up.
  2. In an electric mixer add the softened butter, flour, yeast, sugar and salt. Turn the mixer on low-medium speed and let it combine all the ingredients for 1 minute. While the mixer is still on, pour in the milk slowly into the bowl and let it combine for t minutes. The dough formed would be extremely soft and if you poke your finger in it – it would bounce back! 
  1. Take the dough out on the countertop top and knead it for a couple of minutes. After that flatten the dough straight. Cover it with plastic wrap or aluminum foil and keep it in the refrigerator for an hour. 
  1. In the meanwhile, place butter sticks on a plastic sheet, next to each other. Then cover them again with another plastic sheet and use a rolling pin to flatten the butter. A thin rectangular butter spread would be formed. Place the butter spread in the fridge too, for it to cool down. 
  2. Laminating the dough is the part where the butter had to be folded into the dough several times. Take out the dough and roll it to form a large rectangle. Do this on a silicone mat or any surface that would prevent the dough from sticking. Place the butter sheet on top of the rectangular dough. Fold-out each corner of the dough towards the center so that the butter is completely covered. 
  3. Roll the dough out again and fold it in the form of a letter. Wrap up the pastries with a plastic sheet and keep it in the fridge for about 60 minutes. This step has to be repeated 5 times. Which gives the croissants a total of 749 layers!
  4. Take the dough out of the freezer again and cut it into long triangles. Roll them up as they form a crescent shape. 
  5. In another bowl beat an egg along with some milk. Brush all the croissants with this egg mixture. 
  6. Preheat the oven to 400°C. Place the croissants on a baking tray and place it in the oven. 
  7. Turn on the upper stove first and bake the croissants there for 8-12 minutes, until it turns golden brown. Turn the oven stove to down and repeat the process.
